Negotiations
are on going with a number of suppliers at this time but suffice it to say
real ale will play an important part in the new supply chain being sourced
from Suffolk brewers. Other supporting ales, beers, lagers will be available
and it is anticipated that these will be sourced from a very well
established independent family run brewery further north, variety being of
the essence. In relation to food, the desire is to source this fresh from
local suppliers. Home made and well presented traditional snacks and main
meals will be available at lunchtime and evenings, supported by a reasonably
priced and extensive wine list.
A search is currently ongoing for the cook/chef to deliver the above who will be supported by other waiting staff that they would dearly like to recruit from the village or surrounding villages if possible. Both Paul and Margaret are really looking forward to the move and hope they can provide the kind of warm welcoming atmosphere that has been characteristic of The Greyhound Inn in the not too distant past.
Paul and Margaret Whayman were born at Tunstall and Campsea Ash respectively being educated at Butley and Wickam Market secondary schools. Paul’s first employment was with The Suffolk Constabulary as a Police Officer at Woodbridge and Felixstowe. Margaret was employed by Clarke Butchers and A J Hall Supermarket both in Wickham Market before they married in 1970.
They have two sons Matthew and Justin. Matthew is a senior chemist for an international drug company being married to Cathy and they have an 18-month old son Joseph. Justin recently gave up a high-powered IT career in London to become licensee of his own public house in West Sussex.
In 1977 Paul and Margaret left Suffolk to run a successful free house in North Norfolk, which they did for five years before pursuing their current careers from which they are retiring. Their interests include supporting Ipswich Town Football Club, Carriage Driving, Walking and Gardening; they have two horses, two dogs and a cat.
The Greyhound Inn, Pettistree is reputedly the oldest inn in Suffolk and when Paul and Margaret saw it was available they saw not only the opportunity to return home but to sympathetically restore the ‘old girl’ to her former glory and thus retain a village facility. Enquiries were made and the rest is history in so much as the roof is currently being replaced, the timbers being treated and the roof space being insulated for the first time ever. It will also undergo complete repainting inside and out including the outside toilets, refurbishment to both bars with new furniture and fittings, re-fitting of the commercial kitchen as well as some cosmetic work to the living accommodation.
The gardens and car park will feature next with the outside toilets being tackled in the autumn. Because the building is Grade two listed is will be appreciated that there are certain restrictions which in essence determine what can be done with the toilets, but the plan is to retain them where they are, to convert part into a disabled unit and connect them to the main building by a covered walk way in keeping with the existing stable.
